After a lovely cruise out to the Kennilworth Homestead, Check Mick Capelli and Noel from Green RV get back into their adventures with a few simple fish dishes, and a sneaky little game of Scrabble while it cooks! Keeping preparation to a minimum, these Fish En Papillote (Fish in Baking Paper) are a simple way to fuse the flavours of vegetables, seasoning and fish all together with a result that is as enjoyable as the scenery from their location alongside the Mary River!

BAKED SALMON EN PAPILLOTE

Fish En Papillote — fish baked in Baking paper — is a healthy method of cooking fish with vegetables because they steam within the package and use little extra fat. Fish cooked in this way stays moist and requires very little equipment. You can bake a wide variety of fish using this method and, since the fish and vegetables are baked in the same package, all of the flavours blend together creating a flavourful nutritious dish requiring little clean-up.

Choose fish that has firm flesh and does not have a strong odour.

Method

Option: Beans, Asparagus, Potato

Set the oven to 200 degrees Celsius (400 degrees Fahrenheit) while you assemble the Baking Paper packages.

Drizzle Olive oil on Baking Paper and then place Asparagus, Dill and Fish on Baking Paper

Add diced Butter, a Tablespoon of Orange Juice, Salt and Pepper

Fold the parchment paper by bringing together 2 of the ends in the center of the package and crimping the paper to close the package. Then, roll up the two remaining sides towards the center as well.

Place the Parcel on a tray and into the Oven for 12-15 minutes.

Serve with Roasted Potato wedges and Salad

Ingredients

  • 2 x 30x30cm Baking Paper
  • 2 x 180gm Salmon Fillets (or whichever fish you prefer Barramundi, Blue Eye, Snapper)
  • 2 Tablespoons Butter (cut into dice size pieces)
  • A few Sprigs of Fresh Dill
  • 30ml of Orange Juice or White Wine
  • A bunch of Beans for 2 people
  • A bunch of Asparagus
  • Smokey Bacon Rub
  • Salt and Pepper

Serve with Steamed rice and Asian Coleslaw Salad
